Whoever Lara is, well she is a genius. She is making a whole lot of money off the easiest recipe ever! I mean seriously, anyone can make this.
Larabars are probably one of the only Paleo bars out there. Most things that come packaged with a label should NOT be eaten. We eat these every now and then if we are on the road and need a small snack. I also give these to Desmond, he loves them of course.
You can experiment with flavors, the possibilities are endless with this recipe. Switch the nuts, add different fruit…etc.
These are the two recipes I have made so far.
Chocolate Coconut Cookie Bar
- 1 cup pitted dates (packed)
- 1/2 cup cashews
- 1/4 cup shredded unsweetened coconut
- 1 Tbsp. Chocolate Coconut Butter (I used Artisana)
or 1 Tbsp. Coconut Butter and 1 tsp cocoa powder
or 1 Tbsp. Coconut Oil and 1 tsp cocoa powder
- Handful of Dark Chocolate Chips (I used Cacao Nibs)
1. Dump all ingredients except chocolate chips in food processor. Process until there are no large pieces of nuts or dates.
2. Pour “batter” onto a sheet of wax paper and add the chocolate chips, placing them evenly throughout mixture. Using your hands, press and mold the batter into a square no more than half an inch thick. Fold wax paper over bar and place in refrigerator for at least 20 minutes.
3. Once cooled, cut the bar into desired size pieces. Voila! You now have your own Larabars at home. =)
Cashew Cookie Bar
- 1 cup pitted dates (packed)
- 1/2 cup cashews
- 1/4 cup shredded unsweetened coconut (optional)
- 1 tsp coconut oil
- 1 tsp raw honey
Follow same procedure as above. Enjoy!
