Yes you read correctly. Risotto! I found this recipe on Paleo Table and tweaked it a little bit to make it my own. This is seriously a genius idea. I made it last night along with my famous chicken vaca frita. The taste was truly amazing and it was very filling. Of course my favorite part is that it’s quick and easy being that I have an 8 month old who keeps me extremely busy.
White Truffle Turnip “Risotto”
-2-3 large turnips
-4 tbsp butter
-1 clove garlic (chopped)
-1 c chicken stock
-2 tbsp white truffle oil (optional but highly recommended)
-salt and pepper to taste
1. Trim ends of turnips and rinse well. Grate using a food processor or hand grater.
2. Melt butter in medium sauce pan over medium high heat. Add garlic and sauté for a minute.
3. Add turnips and toss until covered with butter.
4. Add chicken stock and keep at rapid boil for 10 minutes or until liquid has evaporated. Serve on plate and drizzle truffle oil over risotto. Enjoy!
